Veggies for UNI…or Just I

I was traveling the aisles at Hy-Vee the other night, and I spied with my little eyes…colored cauliflower! I already had a head of cauliflower in my fridge, so I talked myself out of purchasing it that evening. However, a head of cauliflower equals one serving in Laura World, so when I found myself back at Hy-Vee last night, the cauliflower was still there (heck, it was probably the exact same cauliflower…it just aged at the store instead of my crisper).

So, tonight I’m proud to present…UNI cauliflower!

Really, how exciting is that?! I ate it out of my very favorite bowl — the blue bowl with the polka dots. It’s actually my roommate’s bowl, but I bonded with it several years ago. I also really enjoy her Hello Kitty spoon. Who needs fine china when you’ve got polka dots and Hello Kitty?

I needed to roast two heads of cauliflower to create my purple and gold masterpiece. My roommate strongly encouraged me to refrain from eating both heads in one evening. (She’s just looking out for herself — remember, she’s downwind from the bathroom.) I humored her and didn’t finish off my veggies. It was a good decision — I’m ridiculously excited to sing the UNI Fight Song to my co-workers while I eat my lunch tomorrow.

The UNI cauliflower was one of three fabulous things that happened today. The other two were:

1. Discovering a love for fresh edamame at Trader Joe’s. I also vowed to name my first child Trader Joe. It has a nice ring.

2. Finding a lost black dress sock as I was changing at the gym. It fell out of my gym shorts. I cheered. I don’t think anyone heard, but I can’t be sure.

    Wow. I love that within the course of a week we’ve both found a black dress sock in our gym shorts. As for just looking out for myself, I’m a firm believer in self-preservation. And you would have regretted two heads of cauliflower, I can virtually guarantee it.
